Twice Baked Potato
This is a great and tasty way to utilize leftover potatoes from last night's dinner. Take your baked potatoes to the ultimate level of creamy, cheesy, buttery goodness.
Season with oil and salt.
Bake in a 350 degree oven for 1 hour.
Check to make sure potato is cooked and continue cooking if needed.
Cool down potato.
Cut the ends off, cut in half and scoop out half of the inside.
Combine all ingredients in a bowl and mix well.
Fill the empty potato halves with the filling. Making sure the filling is slightly heaping over the sides of the potato.
Bake at 350 degrees for 12 minutes and hold warn.
You may garnish with shaved chives.
