Southern Fried Chicken
Southern fried chicken has become a big portion of my diet through my years living in West Virginia. It's great for picnicking!
Serves 16 pieces
Combine all ingredients for the marinade into a bowl except the chicken and whisk well.
Place the chicken pieces into the marinade making sure the chicken is submerged in the marinade. Allow sitting for at least 2.5 hours up to overnight.
In a separate bowl, sift the dredging flour ingredients together and mix using a whisk.
Place the chicken pieces into the dredging flour and coat the chicken evenly.
Fry at 325 degrees for about 12 minute for the breast and 15 minutes for the drumstick and thigh. The coating should be golden brown.
After removing from the fryer, separate the dark meat and white meat. Thighs with the drumstick on one tray and the breast on another tray.
Place the chicken into a 325 degrees oven to finish about 3 to 4 minutes more.
Once done remove the chicken from the oven and allow resting before serving with your favorite mashed potato and gravy recipe.
